Bunny Chow
Serves 2
A South African working man's hearty lunch. The trick to a good bunny is to use fresh white bread, cut loaf in half, and fill it with curry. Be careful to leave sufficient crust along the edges and at the bottom when you scoop the bread out, to prevent leaking when you pour in the curry. No idea why they call it "bunny".
Ingredients:
1 loaf white bread, halved and hollowed
4 Tbs. oil
250g minced meat (beef or lamb)
1 clove garlic, chopped1 in. piece fresh ginger, finely chopped
1/2 tsp. dry thyme
1 Tbs. curry powder
1 tsp. turmeric
1 can each kidney beans and pinto beans
2 potatoes, cubed
2 onions, chopped
1 carrot, diced
1 bay leafsalt and pepper to taste
Fry onions in oil until soft.
Add garlic, ginger and thyme.
After a minute, add the curry.
Keep stirring for another 2 minutes.
Add meat, potatoes and bay leaf, stir.
Add beans and just enough water or stock to gently boil until potatoes are soft. Scoop curry into bread, cover with the scooped out soft bread. Serve with plenty of napkins.
