Roaming Goat Barbecue
Our version of a township classic
Serves 8
Ingredients:
One young goat (8 to 12 lbs or 4 -6 kgs) cut into serving pieces.
Barbecue Sauce:
1 8-ounce can chopped tomatoes
2 C water
2 Tbs. butter
1/2 tsp. ground cumin
2 cloves garlic, chopped
1/2 tsp. oregano
6 whole cloves
1 Tbs. sugar
2 Tbs. vinegar
3 carrots, finely diced
1 Tbs. ground black pepper
1/4 t salt
Preheat oven 350 F (180 C). Place goat pieces in a roasting pan. Cook for 20 minutes using a meat thermometer, making sure internal temperature reaches 160 F (80C). Meanwhile, mix remaining ingredients in a small pan to prepare barbecue sauce. Simmer for 30 minutes. Baste meat with sauce.Cook for 2 hours or until meat is tender.
